Executive Chef Jeremy Duclut worked closely with renowned kitchen designer Ted Barber (Theodore Barber & Company) and kitchen installer Baring Industries, to design his dream state of the art kitchen. Which as he puts it “is a big turn-on for a Chef.” The kitchen (covering 2,900 square feet) features white ceramic tile and stainless steel wall coverings throughout. The seamless, anti-slip Silikal flooring is a LEED certified product (www.usgbc.org/LEED). A pollution control unit trademarked “ClearAir” by Gaylord Industries was installed utilizing the latest innovations in exhaust hood technology. This ensures that smoke particles and odors from the kitchen exhaust system are fully eliminated via an ultra violet cleaning process before being released into the atmosphere. It is a true environmentally friendly device and lives up to Jeremy’s personal commitment to environmental safety.

   

Chef Jeremy chose as part of his kitchen equipment, a Rational combination oven which offers not only a wide variety of cooking functions but also allows him to control and monitor precisely the temperature, humidity and moisture inside the oven ensuring that each dish is cooked to perfection.
